Sai Oua or Northern Thai sausage or Chiang Mai sausage is the Iconic grilled pork sausage from Northern Thailand

Mainly sold as a Street Food delicacy, Sai Oua contains minced pork meat, herbs, spices, and kaeng khua red curry paste

It is usually eaten grilled with sticky rice or served as a snack or starter

 

What really separates a Thai Sausages from its western counterparts is the sheer variety of herbs and spices added to the sausage mix.

Typically Sai Oua Sausage will contain galangal, lemon grass, garlic, coriander, chilli, kaffier lime leaves, white pepper and fish sauce, making the Sai Oua Thai Sausage something very special.
